The North Florida winter seems to be moving on with heavy rain storms and warming temperatures. Most remaining citrus was harvested today, with the exception of the second picking of Key limes, which will stay on the trees for one more pie to be made. The last grapefruit were served for Saturday breakfast and a nice bucket of tangelos and honey murcott tangerines were picked for storage in our refrigerator. This was necessitated by some dropping to the ground, possibly assisted by raccoons or squirrels. This left the KUMQUAT tree to be harvested. Last year we tried a few on a baked salmon recipe with great success, so this year the crop was destined for slicing the peels and freezing them for cooking. The crop was not quite as heavy as last year but perfectly adequate. The fruit were washed and the stem sliced off, allowing the seeds and pulp (the sour part of a kumquat) to be extruded. The sweet peels are then sliced into rings, laid out on a tray for freezing, and stored in zip-locked freezer bags, awaiting the next fish dinner.
